- 1 pkg. mixed baby spring greens
- 1 pink grapefruit, quartered & divided
- goat cheese, crumbled
- 1/2 tbsp. honey
- 1 tbsp. dijon mustard
- 1/4 c. olive oil
- salt & pepper, to taste
Combine honey, mustard, olive oil, salt and pepper. Stir until combined. In large bowl toss salad greens with dressing mixture. Serve and top with grapefruit and crumbled goat cheese.
